LEMON CHICKEN

LEMON CHICKEN

INGREDIENTS:

6 Small boneless, skinless chicken breast halves

1 tablespoon olive oil

1/2 cup chicken broth

1 tablespoon lemon / lime juice

1/4 teaspoon Salt

1/8 teaspoon dill

1/2 lemon, thinly sliced

2 green onions (with tops) sliced.

METHOD:

Cook chicken breasts on olive oil for 3-4 min on each side, turning once, until light brown

Combine broth, lemon juice, salt and dill; pour over the chicken.

Place lemon slices on chicken. Bring to a boil, reduce heat.

Cover and simmer for 10 min or till chicken in cooked through. Remove chicken, keep warm.

Heat pan juices to boiling, cook for 3 min or so till reduced by half. Pour over the chicken.

Sprinkle with onions and serve.

Makes 6 servings
